Annually, approximately 2–3 percent of India's fruits and vegetables are transformed into products such as jams, pickles, juices, and canned goods. This low percentage stems from insufficient cold storage, processing facilities, and market connections. Enhancing processing rates can mitigate post-harvest spoilage, boost farmer earnings, and increase the value of horticultural products. The Indian government is implementing programs like Mega Food Parks and cold chain infrastructure to stimulate the food processing industry.
