The Glycaemic Index (GI) indicates how rapidly a food containing carbohydrates increases blood glucose. Low-GI foods digest slowly, leading to a gradual rise in blood sugar. High-GI foods cause a rapid increase.

- Whole grains (A): Moderate GI.
- Brown rice (C): GI is higher than whole grains, but lower than baked potatoes.
